Recently, I discovered Nicki Herrell's cottage bakery,The Happy Little Cakery, and I am thrilled that I did! My son requested a Super Mario Cake for his 8th birthday. Nicki put her creative talents to work and incorporated my son's favorite Mario figures into an adorable and delicious cake that far exceeded our expectations! All of our party guests raved about what a work of art his cake turned out to be. We came home with a mere morsel of cake leftover since it was so delicious.
Nicki is mostly a self taught baker who has been "caking" for about six years. She was first inspired to begin baking cakes for her sons' birthdays. Then in her first few years of "caking" she began to bake cakes for others. As time passed she gave birth to a baby girl while also a busy homeschooling mom. Nicki found that making cakes for others was something that had to be put aside while she focused on her family.
Now, that her daughter is a preschooler Nicki rekindled her passion for "caking" for other families and The Happy Littler Cakery was born! Nicki loves the memories she feels when she bakes with her grandmother's classic recipes but she also enjoys playing with new flavor combinations. One of her favorite cakes to bake is a chocolate fudge cake with espresso butter cream...she says, "it is to die for!" Even though we still have the heat here in Central Florida in the fall, her Pumpkin Spice Latte Cupcakes are very popular and can put someone right in the mood for fall with just one bite!

Nicki's infant daughter who kept her away from sharing her talent with others for a few years is now forefront in The Happy Little Cakery. Now at age 3, she enjoys "caking" just as much as her mother. Nicki sets up an entire "decorating station" for her daughter and the two share special mommy and me time each time Nicki bakes and decorates a cake. Her daughter aka "the cutest assistant in the world" has her own fondant, cookie cutters and freshly baked cakes where she can play real life baker. Her cakes are not for sale at this time, but in a few years I bet the adorable little assistant won't be able to keep up with her orders. She shares the same passion as her mother and the bonding moment between the two of them is indescribable!
Along with running a successful cottage bakery; Nicki is a proud home schooling mom, wife of a law enforcement officer, and a passionate follower of Jesus. She is very thankful for the talents He has given her and she is constantly amazed with how He has blessed her baking endeavor.
